Oven Fried Chicken

I tried a new recipe last night that was really good, so I thought I would share! It's kind of like shake 'n bake, but homemade.

Oven Fried Chicken

1/3 c. dry bread crumbs                                          1/2 tsp.ground red pepper
1 1/2 T. parmesan cheese, grated                   1/2 c. buttermilk
1 1/2 tsp. paprika                                                    6 skinned chicken breast halves
1 1/2 tsp. dried thyme                                           1 1/2 T. butter, melted
3/4 tsp. garlic powder

Preheat oven to 400 degrees. Combine bread crumbs, Parmesan cheese, paprika, thyme, garlic powder and red pepper in a shallow dish. Place buttermilk in a shallow dish.  Dip chicken in buttermilk; then dredge in crumb mixture. Place chicken, breast sides up, on a jellyroll pan or cookie sheet, coated with cooking spray. Drizzle butter over chicken. Bake 40 minutes or until done. Yield: 6 servings.

  • You need to plan ahead for the bread crumbs (unless you buy them). I didn't think about it before hand and quickly realized fresh, moist bread wasn't going to give me many crumbs! I was able to toast the bread to get the crumbs but it probably would have been better if I'd had them ahead of time.
  •  Also, I couldn't find ground red pepper; only crushed, so I used cayenne pepper instead. It gave it a little bit of a kick, but it was good. I don't like spicy, but it was just enough to make it interesting without making your mouth burn.

I don't have a whole lot to report on with the family. My life just really isn't that interesting! I'm doing really well in my Accounting class. I got 98% on the first test and 90% on the second. I haven't done much in my Business Computer Skills class. It is "At your own pace" which is not a good thing for me. My pace is Procrastination! I need to get going on it. I think it will be an easy class though.

Brandon is doing really well at work. His manager asked him recently how he would feel about moving to another, much busier program. It would be a lot more responsibility, but it would be a good move. His program is winding down, so he may end up being moved back into a support engineer position. But if he takes over this other program he will continue being Lead Engineer, which looks better on the resume. We will see what happens. I'm really proud of him. He hasn't even been with L-3 for two years yet and has already been moved up into a Lead position and has continued to prove himself.

Kayson is doing well. He started rolling over from his back to his belly a couple weeks ago. I swear he did it over a dozen times in a row. I was all excited and was going to post it on here then, but he hasn't done it since! Seriously he did it like crazy that one day and then has come close a few times since but can't seem to figure it out again. Silly boy!

4 Months Old

Kayson is four months old today! 


I can't believe how fast he is growing up!!! He is really starting to show his own personality. He's gotten a lot more vocal, likes to "talk" and squeal. He has also started giggling when you tickle and play with him.
Here are a few pictures of him trying out his Bumbo seat. His legs are so chubby we have to squeeze him into it. He's not real sure what he thinks of it yet.



Kayson has started to reach for things a lot more. He is just starting to get the coordination to actually grab onto what he wants and try to get it in his mouth. He just started giving kisses, well his version anyway. He opens his mouth nice and big and gives a very slobbery kiss. It is so cute! He hasn't rolled over yet, but I think he is getting close. He is also starting to get more shy with strangers. It makes me feel bad. People always say "He doesn't like me". I know that's not it, he is just used to being with mom and dad all the time. He has never even had a babysitter since he hasn't figured out the bottle. I know he'll get over it eventually.

We recently moved him into his own room. I think it has been harder for me than him! He hadn't been sleeping very well so I attributed it to a growth spurt or teething. Once we moved him to his crib though, he started sleeping through the night. The first night he slept for 8 hours straight and the second night he slept 10! I guess his bassinet just wasn't very comfortable anymore. 
Kayson has his 4 month appointment next week. I'm anxious to see where he ranks. Everyone is always commenting on how big he is. I can barely carry him in his carrier, he is so heavy! I think he is going to be built like his daddy!
He has been so much fun! I love hanging out with my little guy all day. I feel so blessed to have such a special boy in my life. The last 4 months have been incredible!

Giving in

I'm finally giving into this whole blog thing. I love reading other people's but when I thought about starting my own it just seemed like a lot of work! I've thought about it a lot lately and decided it would be worth it (even if it is a pain in my butt)! Where to start?

 Brandon and I got married July 29, 2010.

Five months later I found out I was pregnant. 

We realized we would not fit comfortably in our small duplex, so we quickly began the house hunt. We found a great house in a great neighborhood in Clinton. We love it here!

A few months after we moved in we welcomed our first baby, Kayson! Born September 25, 2011 at 10:07pm weighing 7 pounds 10 ounces and 20 inches long.
He has been such a blessing. We can't imagine life without him, he is so much fun! I will write more about him later though. I could go on and on!

Brandon is a Lead Test Engineer at L-3 Communications in Salt Lake. He loves it there. I am a stay at home mom and student. I am taking online classes at Weber for Business Administration. I couldn't ask for more. I love being able to stay home with Kayson. What else? We have two very annoying dogs, Kina and Suka. They love to bark at everyone who comes close to our house and when we have visitors they go absolutely nuts! They run around barking and jumping all over everyone, so when we have company they have to be locked outside or in their kennel. They really are sweet dogs though. When it's just us they are really pretty relaxed and are very good with Kayson. They love to lay next to him and watch him when he has tummy time. It's really cute! 

Well I think that is all for now, Kayson is waking up from his nap. I will try to post more later!
